{"id":352,"date":"2014-01-30T20:44:18","date_gmt":"2014-01-31T01:44:18","guid":{"rendered":"http:\/\/rachel.carlrobitaille.org\/?p=352"},"modified":"2014-01-30T20:46:31","modified_gmt":"2014-01-31T01:46:31","slug":"boeuf-braise-aux-panais-et-au-poireau","status":"publish","type":"post","link":"https:\/\/rachel.carlrobitaille.org\/?p=352","title":{"rendered":"B\u0153uf brais\u00e9 aux panais et au poireau"},"content":{"rendered":"<p>Pr\u00e9paration: 15 min.<br \/>\nCuisson: 2 h 10 min.<br \/>\nPortions: 4<br \/>\nSource: Chef Caroline McCann<br \/>\n        METRO mon \u00e9picier<\/p>\n<p><strong>Ingr\u00e9dients:<\/strong><\/p>\n<p>15 ml (1 c. \u00e0 soupe)  beurre non sal\u00e9 Selection<br \/>\n600 g (1,33 lb) int\u00e9rieur de ronde de boeuf, coup\u00e9 en cubes de 1 cm (1\/2 po.) d&rsquo;\u00e9paiss<br \/>\n3 petits panais, coup\u00e9s en biseaux de 1 cm (\u00bd po.) d\u2019\u00e9paisseur<br \/>\n1 poireau, blanc seulement, lav\u00e9, coup\u00e9 en 4 sur le sens de la longueur<br \/>\n20 ml (4 c. \u00e0 th\u00e9) farine tout usage Selection<br \/>\nSel et poivre du moulin, au go\u00fbt<br \/>\n750 ml (3 tasses) bouillon de boeuf maison ou r\u00e9duit en sodium Irresistibles Mieux-\u00eatre<br \/>\n1 ml (1\/4 c. \u00e0 th\u00e9) clou de girofle moulu Selection<br \/>\nPersil, hach\u00e9 (facultatif), au go\u00fbt<\/p>\n<p><strong>Pr\u00e9paration:<\/strong><\/p>\n<p>Pr\u00e9chauffer le four \u00e0 180 \u00b0C (350 \u00b0F).<br \/>\nDans une casserole, faire fondre la moiti\u00e9 du beurre \u00e0 feu moyen-vif.<br \/>\nAjouter la moiti\u00e9 des cubes de b\u0153uf et faire saisir jusqu\u2019\u00e0 coloration dor\u00e9e.<br \/>\nRetirer les cubes de b\u0153uf et r\u00e9server dans une assiette.<br \/>\nDans la casserole, ajouter les restes de beurre et de cubes de b\u0153uf, les panais et les poireaux.<br \/>\nFaire saisir 4 minutes pour bien colorer la viande et les l\u00e9gumes.<br \/>\nRemettre les cubes de b\u0153uf r\u00e9serv\u00e9s et ajouter la farine. Assaisonner.<br \/>\nPoursuivre la cuisson 2 minutes en brassant \u00e0 la cuill\u00e8re de bois.<br \/>\nVerser le bouillon de b\u0153uf et gratter le fond de la casserole pour \u00e9viter que la farine n\u2019y adh\u00e8re.<br \/>\nAjouter le clou de girofle et porter \u00e0 \u00e9bullition.<br \/>\nCouvrir et mettre au four 2 heures ou jusqu\u2019\u00e0 tendret\u00e9.<br \/>\nPour la sauce : s\u00e9parer la viande et les l\u00e9gumes de la sauce et la faire r\u00e9duire pour une consistance plus \u00e9paisse.<br \/>\nAjouter du persil hach\u00e9 juste avant de servir.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Pr\u00e9paration: 15 min.
