D\u00e9poser le jambon dans une cocotte.<br \/>\nM\u00e9langer la marmelade et la moutarde s\u00e8che, et badigeonner la viande.<br \/>\nArroser de sirop d&rsquo;\u00e9rable et verser la bi\u00e8re.<br \/>\nCuisson : de 4 \u00e0 5 heures, cuire les deux premi\u00e8res heures \u00e0 325 \u00b0F \u00e0 couvert, puis r\u00e9duire \u00e0 300 \u00b0F pour les 2 \u00e0 3 heures suivantes, en prenant soin d&rsquo;arroser r\u00e9guli\u00e8rement.<br \/>\nCouper en tranches fines ou en effiloch\u00e9.
