{"id":566,"date":"2015-02-08T15:06:15","date_gmt":"2015-02-08T20:06:15","guid":{"rendered":"http:\/\/rachel.carlrobitaille.org\/?p=566"},"modified":"2015-02-08T15:06:15","modified_gmt":"2015-02-08T20:06:15","slug":"osso-bucco","status":"publish","type":"post","link":"https:\/\/rachel.carlrobitaille.org\/?p=566","title":{"rendered":"Osso bucco"},"content":{"rendered":"<p>Posted on 2012\/11\/18 by Marie-Claude\t<\/p>\n<p><strong>Notes<\/strong> : Je fais la recette avec des jarrets de veau ou de porc.<\/p>\n<p><strong>Ingr\u00e9dients:<\/strong><strong><\/p>\n<p>    4 tranches de jarrets de veau ou 8 tranches de jarrets de porc<br \/>\n    1 \u00e0 2 c. \u00e0 table huile d\u2019olive<br \/>\n    1 oignon hach\u00e9<br \/>\n    1 branche de c\u00e9leri hach\u00e9<br \/>\n    1 \u00e0 2 carottes hach\u00e9es<br \/>\n    1 \u00e0 2 gousses d\u2019ail hach\u00e9<br \/>\n    3\/4 tasse vin blanc<br \/>\n    1 tasse de bouillon de poulet<br \/>\n    1 pot de 500 ml de tomates enti\u00e8res \u00e9cras\u00e9es<br \/>\n    quelques branches de thym<br \/>\n    sel et poivre au go\u00fbt<\/p>\n<p><strong>Pr\u00e9paration:<\/strong><\/strong><\/p>\n<p>    Saler et poivrer les jarrets de chaque c\u00f4t\u00e9.  Dans un creuset, faire revenir la viande de chaque c\u00f4t\u00e9 dans un peu d\u2019huile d\u2019olive. Retirer la viande du feu lorsqu\u2019elle est bien dor\u00e9e.<\/p>\n<p>    Faire revenir le c\u00e9leri, les carottes et les oignons.  Ajouter l\u2019ail lorsque les l\u00e9gumes sont bien dor\u00e9s.<\/p>\n<p>    D\u00e9glacer avec le vin blanc.  Laisser l\u00e9g\u00e8rement \u00e9vaporer.<\/p>\n<p>    Ajouter le bouillon de poulet, les tomates \u00e9cras\u00e9es et le thym.<\/p>\n<p>    Remettre la viande dans la sauce et laisser mijoter \u00e0 couvert \u00e0 feu doux pendant 1h30 \u00e0 2h ou jusqu\u2019\u00e0 ce que la viande se d\u00e9tache bien de l\u2019os.<\/p>\n<p>    \u00c0 la fin de la cuisson, on peut mettre la viande de c\u00f4t\u00e9 et faire r\u00e9duire la sauce si elle est trop liquide.
